@Hollis5 this recipe is called "French-ish" onion soup, not French onion soup. If you like the Petit Trois recipe, it's also available on the site. Go make it but don't give bad reviews for something you haven't even made.

nope, not going for these substitutions. the REAL recipe -- the Petit Trois version, with the homemade veal stock (to die for!) -- is TRULY *French onion soup*. the Healthyish version is merely onion soup (without the veal stock, the cheese, and the toasted bread, it's lackluster, IMO. i have no patience for *veganizing* foods. i'm a dedicated omnivore, and meat products like veal neck bones provide that *something* that takes a recipe to another place entirely.

This is a good recipe, although I would substitute 50% water/50% broth (vegetarian beef-flavor or beef broth for richer flavor.

Toasting the bread before adding cheese is often overlooked, it really makes the difference! The browned bits left on the pot are the secret ingredient for sure — nice one.

with French onion soup the broth should be dark, and rich, water does not do that, I would use consommé instead of water, just sayin
